Commercy: Stanislas's Château and the Legend of the Madeleine
200 + 100 XP
Commercy was the seat of a small sovereign principality, and its château passed in 1744 to Stanislas Leszczyński, the former King of Poland, who liked it better than Lunéville because the etiquette was more relaxed; he brought his court here, had Emmanuel Héré remodel the forecourt, and added a water château down by the Meuse that was burned after his death. Today the building holds the town hall, the library and other offices rather than a museum. Legend says that in 1755, when Stanislas's cook stormed out taking the dessert with him, Madeleine Paulmier, a young servant of the marquise Perrotin de Beaumont, baked her grandmother's little cakes in scallop shells and the duke gave the cake her name; the Lorraine historian Charles Sadoul instead credits a cook of Cardinal de Retz, who lived at Commercy a century earlier.
Required Activities
1
of 4
Stand in the middle of the horseshoe Place du Fer à Cheval and read Stanislas's forecourt off the stonework — the low outbuildings curving away on both sides, the deep-cut arcades Emmanuel Héré gave them, the balustraded terraces with their stone flame-pots above, and the four columns and triangular pediment marking the centre of the main block at the far end
2
of 4
Buy a box of madeleines from a Commercy maker, turn one over before you eat it and find the ridges of the scallop shell it was moulded in — the shell is the shape the 1755 story turns on — then look for the hump on top that only a properly rested batter gives
3
of 4
Walk down from the château terrace to the Meuse and work out what cut the garden off: the Marne–Rhine canal and the Paris–Strasbourg railway were driven straight through it in the mid-19th century. Find the scattered pieces of garden stonework still lying along the river bank, all that is left of the parterre, the grand canal and the burned water château
4
of 4
Stand on the platform at Commercy station, where from the 1890s until the eve of the Second World War women with big wicker baskets crowded the carriage doors at every stop, each shouting the name of the bakery she sold for — a scene that happened nowhere else on the French network

Before you go
The château courtyard and the Place du Fer à Cheval are public at any hour, but the building is working council offices — the state rooms are not on show, so plan the visit around the outside. The town's madeleine makers sell from the ZAE La Louvière estate on the edge of Commercy rather than the old centre, which is easier with a van than the town square. There is no baking on Mondays or Sundays, so come midweek if you want to see the trays coming out.
